There are many things in life I enjoy. Eating well is one of them. However, managing life with a newborn and a full-time work schedule doesn’t allow me to explore different recipes as much as I once did. I’m by no means ready to give in to store-bought frozen meals or processed meals made from a box (mostly…sometimes you gotta do what you gotta do). Organization and balance are key to managing everything while still enjoying a home-cooked meal. If you’re like me, a good meal just makes everything better. And, having leftovers for lunch the next day is the perfect cherry on top.
